This recipe for Zucchini Tortellini can’t get much easier! The combination of fresh zucchini and tomatoes makes us all dream of summer when we can be plucking these items from our own gardens or purchasing them at their prime from the farmer’s market!
Yield:4 servings 1x
1pound cheese tortellini
8roma tomatoes, chopped
2cloves garlic minced
1⁄2 teaspoon dried basil
1⁄2 teaspoon oregano
1⁄4 cup Parmesan cheese, shredded
Cook tortellini as directed on package.
Heat tomatoes, zucchini, garlic, basil, and oregano in a medium skillet 3 to 5 minutes until zucchini is tender.
